A Hearty Autumnal Greeting from our Kitchen
That which has just been harvested, or arrives fresh from the butcher, takes centre stage. Rigorously local, our autumn dishes are based on traditional recipes, reinterpreted for today by our culinary staff; as you can see with even a cursory glance at our menu.

Our menu in the autumn months combines South Tyrolean cuisine with the ancient local custom of Törggelen. We creatively reinterpret traditional country dishes using local products.
The Traditions
More than Dumplings and Sauerkraut
Although of course we serve them! You will find time honoured dishes: Knödel dumplings and Nocken, Schlutzkrapfen (crescent-shaped “ravioli”), Tirtlen (fried “ravioli”), Gerstsuppe barley soup, pork ribs with sauerkraut, Krapfen doughnuts and chestnuts. Local specialities, revisited to make new variations prepared in the most refined manner. Autumn cuisine for us certainly means tradition, but also the joy of innovating.
